[Tooth' non collagenous protein degradation by Streptococcus mutans (author's transl)].

Enzymatic degradation of non collagenic proteins of the organic matrix of bovine teeth by cariogenic Streptococcus mutans has been studied. The activity on glycoaminoglycans of a constitutive bacterial exoenzyme depends on pH. The speed of degradation of each proteic fraction varies depending on the presence of the substrate during the growing phase of the Bacteria.
