The current research was carried out to study the incidence of li () in Egyptian cheese (Kariesh and Ras) and molecular characterization of certain virulence genes () using multiplex PCR technique. Biocontrol of with essential oils (clove and thyme oil) was also studied. A total of 150 random samples of Kariesh and Ras cheese (75 each) were collected from various areas in Governorate of Menoufia. According to our results, the frequency of isolated from Kariesh and Ras cheese was 16% and 5.3%, respectively. Serological identification classified the strains into two groups, enterohemorrhagic (EHEC) serogroup (O26: H11, O91: H21, O111: H2 and O103: H2). While the enterotoxigenic (ETEC) serogroup were detected as O125: H21 which is the most prevalent strain. O171: H2, O86 and O119: H6 belonging to enteropathogenic (EPEC). The most prevalent gene detected in strains was (87.5%) followed by (86%), (75%), (50%) and (25%) genes. Concerning the antimicrobial activity with essential oils, thyme oil (1%) is considered as the bactericidal effect against (ATCC35150) with improved the sensory evaluation than clove oil (1%). In conclusion, Kariesh and Ras cheese are extremely tainted with pathogenic strains, which represent a strong hazard on the human health.
本研究旨在调查埃及奶酪(卡列什奶酪和拉斯奶酪)中李氏菌的发生率,并使用多重聚合酶链反应技术对某些毒力基因进行分子特征分析。同时也研究了用香精油(丁香油和百里香油)对李氏菌进行生物防治。从米努夫省的不同地区共采集了150份卡列什奶酪和拉斯奶酪的随机样本(各75份)。根据我们的结果,从卡列什奶酪和拉斯奶酪中分离出李氏菌的频率分别为16%和5.3%。血清学鉴定将李氏菌菌株分为两组,即肠出血性李氏菌(EHEC)血清群(O26:H11、O91:H21、O111:H2和O103:H2)。而产肠毒素李氏菌(ETEC)血清群检测为O125:H21,这是最常见的菌株。O171:H2、O86和O119:H6属于肠致病性李氏菌(EPEC)。在李氏菌菌株中检测到的最常见基因是stx(87.5%),其次是eae(86%)、hlyA(75%)、bfpA(50%)和ipaH(25%)基因。关于香精油的抗菌活性,百里香油(1%)对李氏菌(ATCC35150)具有杀菌作用,并且其感官评价优于丁香油(1%)。总之,卡列什奶酪和拉斯奶酪被致病性李氏菌菌株严重污染,对人类健康构成严重危害。
