[Thermodynamic and kinetic study of alpha-lactalbumin denaturation].

The measured curves of alpha-lactalbumin denaturation kinetics in the presence of urea are described in terms of a single phase. Its rate constant does not depend on the parameter detected. Both kinetic and equilibrium measurements show an accumulation of a protein molecule state in the denaturation region which differs from the native one in its fluorescence properties.
