As health awareness grows, UFAs have gained significant market traction, prompting extensive research into their biosynthesis, regulation, and improvement. This review focuses on oilseed crops, offering a comprehensive analysis of: fatty acid composition, biosynthesis pathways, gene regulation, and breeding strategies to enhance quality.
