Abstract

Numerous experiments indicate that in the pathogenesis of so-called civilization diseases, low consumption of dietary fibers seems to be one of etiological factors. Therefore, it is not surprising that dietary fibers play an ever increasing role both in prevention and dietetic management of the diseases. Among these fibers wheat bran containing about 50% of dietary fibers has the most beneficial physiological effect. Besides, wheat bran is fit very well for production of different foodstuffs. Data are reported on the content of crude and dietary fibers in cabbage, radish, carrot, wheat bran and brown bread.

大量实验表明,在所谓的文明病发病机制中,膳食纤维摄入量低似乎是病因之一。因此,膳食纤维在这些疾病的预防和饮食管理中发挥着越来越重要的作用也就不足为奇了。在这些纤维中,含有约50%膳食纤维的麦麸具有最有益的生理作用。此外,麦麸非常适合用于生产不同的食品。本文报道了卷心菜、萝卜、胡萝卜、麦麸和黑面包中粗纤维和膳食纤维的含量。
