Abstract

Freeze-dried culture milk products--yoghurt with sugar, yoghurt with fruits and berries, acidophilic paste--were examined in the course of storage. The optimal time of their storage was determined, high biological value of protein and good viability of lactic-acid microflora were demonstrated. These products are recommended to be incorporated into space diets.
