The relationship between the carbohydrate content of foods and the serum lipid levels are demonstrated in connection with the hypothetical relation between increased sugar consumption and myocardial infarction. The increase in serum triglyceride levels in healthy subjects after a diet rich in carbohydrates in influenced by several factors such as energy balance, absolute quantity of carbohydrate, individual response of the test person, etc. With the aid of a dietary formula trial in healthy adults, saccharose consumed in usual quantities is shown to cause no increase in triglyceride or cholesterol levels.
