A survey is given about general and special measures to avoid bacterial contamination-especially by salmonellae--in the production of foods of animal origin with regard to the related rules and regulations. Special problems are treated and aims are developed especially related with self-control-mechanisms. The actual problem which is caused by salmonella-contamination of eggs is specially treated.
