The aim of this paper was to determine the concentration of nitrates (V) and nitrites (III) in some vegetables originating from producers from the province of Warmia and Mazury and in commercial samples provided by a plant producing frozen vegetables situated in the region. Nitrates and nitrites were measured using the spectrometric method according to the methodology described in the Polish Standard PN-92/A-75112. The analyzed vegetables had small amounts of the examined compounds, which were considerably lower than those reported by other authors. The highest means of 48.79 and 33.63 mg NaNO3/kg and 1.79 and 4.83 mg NaNO2/kg were found in the samples from the suppliers and in the commercial spinach samples, respectively. The obtained residual amounts of the examined compounds and lack of significant differences in their concentration between the vegetables produced by different producers indicate the necessity of further studies in this field. Should these results be confirmed in future studies, this fact may have a great importance in the development of an ecological farming strategy for the region of Warmia and Mazury.
本文旨在测定源自瓦尔米亚-马祖里省生产商的某些蔬菜以及该地区一家冷冻蔬菜生产厂提供的商业样品中硝酸盐(V)和亚硝酸盐(III)的浓度。根据波兰标准PN - 92/A - 75112中所述的方法,采用光谱法测定硝酸盐和亚硝酸盐。所分析的蔬菜中检测到的化合物含量较少,大大低于其他作者报告的含量。分别在供应商的样品和商业菠菜样品中发现了最高平均值,硝酸盐(以NaNO₃计)分别为48.79和33.63毫克/千克,亚硝酸盐(以NaNO₂计)分别为1.79和4.83毫克/千克。所检测化合物的残留量以及不同生产商生产的蔬菜中其浓度无显著差异,表明该领域有必要进一步开展研究。如果这些结果在未来研究中得到证实,这一事实可能对瓦尔米亚-马祖里地区生态农业战略的发展具有重要意义。
