Abstract

In the review a number of fermental preparations and the food substrata used for reception hydrolyzates of proteins included in them, and also some questions of embedding of transitive metals in protein and peptide matrixes with formation of organic forms essential trace elements is characterized. Considered modern biotechnological approaches which are used at reception hydrolyzate of food proteins and organic complexes trace microelements on their basis are considered (examined).
