Antioxidants are chemical compounds that can donate one or more electrons to free radicals to prevent degenerative diseases. The crown of pineapple ( (L.) Merr.) contains bromelain, that is, a proteolytic enzyme, which can act as an antioxidant.
The aim of this study was to determine the antioxidant activity of crude bromelain from pineapple crowns that were collected from Subang district, West Java, Indonesia.
Antioxidant activity was determined by the method of 2,2-diphenyl-1-picrylhydrazyl (DPPH) with vitamin C as a standard and measured with visible spectrophotometer.
The pineapple crown was produced 0.26% of dried crude bromelain with total protein content 44.10% and IC value 3624 μg/mL of crude bromelain, which was equivalent to 1590.18 μg/mL of total protein.
Crude bromelain has medium antioxidant activity.
抗氧化剂是能够向自由基提供一个或多个电子以预防退行性疾病的化合物。菠萝(凤梨(L.) Merr.)冠含有菠萝蛋白酶,即一种蛋白水解酶,它可作为抗氧化剂。
本研究的目的是测定从印度尼西亚西爪哇苏邦地区采集的菠萝冠中粗菠萝蛋白酶的抗氧化活性。
以维生素C为标准,采用2,2 - 二苯基 - 1 - 苦基肼(DPPH)法测定抗氧化活性,并用可见分光光度计进行测量。
菠萝冠产生了0.26%的干燥粗菠萝蛋白酶,其总蛋白含量为44.10%,粗菠萝蛋白酶的IC值为3624μg/mL,相当于总蛋白1590.18μg/mL。
粗菠萝蛋白酶具有中等抗氧化活性。
