Effects of red and blue light treatment on physiological quality, microbial loads, redox status and metabolomics profiles of fresh-cut sugarcane in vacuum and plastic packages were investigated during 15 d storage. The results showed that light synergistic vacuum treatment delayed the decrease of pH and the increase of respiration rate and microbial loads, enhanced antioxidant capacities and related enzymes activities. Light treatment was beneficial to O generation, but had opposite effects on O , HO and malondialdehyde. O and HO was negatively associated with CAT, sucrose, fructose, glucose, 2-oxoglutaramate, liquiritigenin and dihydromyricetin, positively with PPO and malondialdehyde. Only phenylacetaldehyde exhibited a negative correlation with O. The biosynthesis of sugars, amino acids and flavonoids were the principal metabolite pathways corresponding to oxidative stress in fresh-cut sugarcane. It could be concluded that the concentration of ROS, especially O and HO, should be appropriate to kill bacteria and retain the quality of fresh-cut sugarcane.
研究了红光和蓝光处理对真空包装和塑料包装鲜切甘蔗在15天贮藏期间生理品质、微生物负荷、氧化还原状态和代谢组学谱的影响。结果表明,光照协同真空处理延缓了pH值的下降以及呼吸速率和微生物负荷的增加,增强了抗氧化能力和相关酶活性。光照处理有利于超氧阴离子的产生,但对超氧阴离子、过氧化氢和丙二醛有相反的影响。超氧阴离子和过氧化氢与过氧化氢酶、蔗糖、果糖、葡萄糖、2-氧代戊二酸、甘草素和二氢杨梅素呈负相关,与多酚氧化酶和丙二醛呈正相关。只有苯乙醛与超氧阴离子呈负相关。糖、氨基酸和黄酮类化合物的生物合成是鲜切甘蔗氧化应激对应的主要代谢途径。可以得出结论,活性氧的浓度,尤其是超氧阴离子和过氧化氢,应适当以杀灭细菌并保持鲜切甘蔗的品质。
