Abstract

Treadmill training of pigs was shown to retard the pH-drop of longissimus dorsi biopsy samples. Training similarly had an inhibiting effect on the post-mortem pH, ATP and glycogen, and on fluid loss (expressible juice) of the gracilis muscle.
