The article delivers information on developed assortment and manufacturing process of a dairy product possessing specific structural, mechanical and organic qualities and heightened biological value owning to albuminous filler "Biovita" supplementing its formula. The developed assortment of dairy products will make it possible to extend the sphere of use of albuminous supplements in manufacturing biologically active and ecologically pure foodstuffs of full value.
