Almost 60% of food additives are colorings, flavorings and other appearance enhancers. Growth of the world's population and growth in demand for food represent the greatest technological challenge of our era. Consequently, usage of substances which preserve the quality and diminish spoilage of food is of prime importance. Nevertheless, the consumer fears that the cumulative effect of additives can lead to cancer, hyperkinesis or other disorders. Given the widespread use of additives, their impact on the health of populations is difficult to study even if certain observed differences between countries are attributed to their diet. Additives introduced during the last few years have satisfied rigorous testing—to which the majority of natural products are not submitted. In contrast, overeating, inactivity, excess saturated fat, alcohol and cigarets are still prevalent, even though the health risks they represent are clearly established. Seeing that the doctor is an authority on health matters, his or her contribution in dispensing information on nutrition and health is important in the battle against fear without scientific proof.
