A new concept for isolation and enumeration of anaerobic bacteria in food is presented. The sample is collected and diluted under anaerobic conditions in a specially designed syringe (M.O.S.), in which cultivation also takes place. A comparison between this method and cultivation in anaerobic jars (GasPak) from a common inoculum revealed a higher number of Clostridium perfringens with the M.O.S.-technique.
