Abstract

The action of amino acids prevalent in soy bean proteins, as compared to casein, on lipid metabolism was studied. Administration of aspartate to experimental hyperlipidemic rats produced a pronounced hypocholesterolemic effect and led to an increased alpha-cholesterol level. Addition of glycine, arginine and cysteine to aspartate raised the hypocholesterolemic effect. However, under these conditions the content of triglycerides in the liver as well as their levels in the blood serum of intact experimental animals were increased.

研究了大豆蛋白中普遍存在的氨基酸与酪蛋白相比对脂质代谢的作用。给实验性高脂血症大鼠施用天冬氨酸产生了明显的降胆固醇作用,并导致α-胆固醇水平升高。在天冬氨酸中添加甘氨酸、精氨酸和半胱氨酸可增强降胆固醇作用。然而,在这些条件下,完整实验动物肝脏中甘油三酯的含量及其血清中的水平均有所增加。
