Abstract

Extraction and antioxidant activities of polysaccharide from pumpkin were discussed. The crude polysaccharide was extracted with the hot water. It showed that the calcium chloride (CaCl) method was ideal for deproteinization. The pumpkin polysaccharide was linked by the α/β-glycosidic bond, and it might contain acetyl groups. Pumpkin polysaccharide was heteropolysaccharide composed of six monosaccharides. In addition, it indicated that pumpkin polysaccharide exhibited good antioxidant activities.

探讨了南瓜多糖的提取及其抗氧化活性。采用热水法提取粗多糖,结果表明氯化钙(CaCl)法是理想的脱蛋白方法。南瓜多糖通过α/β-糖苷键连接,可能含有乙酰基。南瓜多糖是由六种单糖组成的杂多糖。此外,研究表明南瓜多糖具有良好的抗氧化活性。
