The experimental biological value (BVe) of rice enriched with lysine and egg protein was studied in growing Wistar male rats with the use of new parameters for the evaluation of the new food protein quality: potential biological value (BVp) and compensation coefficient (C). Pure protein utilization and body weight of rats receiving the lysine-enriched diet were significantly higher than those in the animals given the rice ration. Similar values were recorded in the animals kept on the diet containing rice with egg protein. The new parameters (BVp and C) enable the evaluation of the food protein aminogram and estimation of the effect of rice enrichment with lysine and egg protein.
