Abstract

The author suggests a method for computation of the difference coefficient of the amino acid score (DCAS) which indicates the mean percentage of the utilization of essential amino acids contained by food protein not to be used for plastic needs. The magnitude of the 100-DCAS is equal to the indicator of the biological value of protein.
