Abstract

INTRODUCTION

Street food has become popular in developing countries due to its affordability, availability and taste. Maintaining the quality and safety of street food is linked to the vendors' appropriate food handling practices to reduce foodborne illness. Therefore, this study aimed to assess food safety knowledge, attitudes and practices of street food vendors in Chattogram city, Bangladesh.

METHODS

A cross-sectional study was carried out among 302 street food vendors from December 2020 to March 2021. Data were collected by in-person interviews through a structured questionnaire. Independent sample -tests and one-way analysis of variance (ANOVA) were used to compare food safety knowledge, attitudes, and practices scores across socio-demographic variables.

RESULTS

The mean score of food safety knowledge, attitudes and practices was 8.99 (SD = 4.17, range: 1-18), 8.46 (SD = 3.51, range: 1-16) and 17.78 (SD = 5.74, range: 1-34), respectively. The food safety knowledge scores significantly ( < 0.05) differed by the participants' age, marital status, income, residence and work experience. The average food safety attitudes score significantly ( < 0.05) varied by age, marital status, income, and education level. The average food safety practices score significantly ( < 0.05) differed by the respondents' education level and work experience.

CONCLUSION

Our findings suggest that food safety knowledge, attitudes, and practices were poor among street food vendors. Therefore, there is a need for strategies and intervention programs such as food safety training and awareness campaigns as well as financial support to improve food safety knowledge, attitudes, and practices which help to reduce foodborne illness.

方法

2020年12月至2021年3月,对302名街头食品摊贩开展了一项横断面研究。通过结构化问卷进行面对面访谈收集数据。采用独立样本检验和单因素方差分析(ANOVA)来比较不同社会人口统计学变量的食品安全知识、态度和行为得分。

结果

食品安全知识、态度和行为的平均得分分别为8.99(标准差=4.17,范围:1 - 18)、8.46(标准差=3.51,范围:1 - 16)和17.78(标准差=5.74,范围:1 - 34)。食品安全知识得分在参与者的年龄、婚姻状况、收入、居住情况和工作经验方面存在显著差异(<0.05)。食品安全态度平均得分在年龄、婚姻状况、收入和教育水平方面存在显著差异(<0.05)。食品安全行为平均得分在受访者的教育水平和工作经验方面存在显著差异(<0.05)。

结论

我们的研究结果表明,街头食品摊贩的食品安全知识、态度和行为较差。因此,需要制定策略和干预计划,如食品安全培训和宣传活动以及财政支持,以提高食品安全知识、态度和行为,这有助于减少食源性疾病。
