Abstract

In this research, intelligent double-layer films were prepared using modified grape skin anthocyanin (MGSA)-betanin (BL)-shikonin (SKN)-gellan gum (GG) as the internal indicator layer and sodium carboxymethyl cellulose (CMC)-polyvinyl alcohol (PVA)-gelatin-Centella asiatica extract (CAE) as the external antimicrobial protective layer. The successful preparation of double-layer films can be revealed by scanning electron microscopy, FT-IR spectroscopy and X-ray diffraction measurements. The mechanical properties, water content, water solubility, and water vapor resistance of films with CAE showed significant enhancement compared to inner layer film and film without CAE. The double-layer films exhibited sensitive pH responsiveness. The presence of the outer layer significantly improved the antioxidant and antimicrobial properties of the inner film. When the films were applied to chicken breast, it was found that the dual-layer films not only allowed for real-time monitoring of the freshness of the chicken breasts, but also successfully extended the shelf-life of the chicken breasts by 1 day compared to the blank group and the single-layer film. Therefore, the double-layer film developed in this study has great potential for monitoring and preserving active intelligent packaging of meat foods.

在本研究中,以改性葡萄皮花青素(MGSA)-甜菜红素(BL)-紫草素(SKN)-结冷胶(GG)作为内部指示层,羧甲基纤维素钠(CMC)-聚乙烯醇(PVA)-明胶-积雪草提取物(CAE)作为外部抗菌保护层,制备了智能双层膜。双层膜的成功制备可通过扫描电子显微镜、傅里叶变换红外光谱和X射线衍射测量来揭示。与内层膜和不含CAE的膜相比,含CAE的膜的机械性能、含水量、水溶性和耐水蒸气性均有显著提高。双层膜表现出灵敏的pH响应性。外层的存在显著改善了内层膜的抗氧化和抗菌性能。当将这些膜应用于鸡胸肉时,发现双层膜不仅能够实时监测鸡胸肉的新鲜度,而且与空白组和单层膜相比,成功地将鸡胸肉的货架期延长了1天。因此,本研究开发 的双层膜在肉类食品的活性智能包装监测和保鲜方面具有巨大潜力。
