Studies were carried out to determine the contents of fatty acids in the lipid fraction of m. Longissimus dorsi from Bulgarian White pigs having a live weight of 25 to 40 kg. A Varian 2100 gas chromatograph with a flame-ionizing Detector, produced in the USA, was used for determination of fatty acids. It was found that, in the lipid fraction of the muscle studied the average content of myristic acid C14, was 1.25%; of palmitic acid C16, 29.08%; of stearic acid C18, 10.21% of palmitoleic acid C16:1, 3.24%; of oleic acid C18:1, 50.21%; and of linoleic acid C18:2, 6.01%.
对体重25至40千克的保加利亚白猪背最长肌脂质部分的脂肪酸含量进行了研究。使用美国生产的配备火焰离子化检测器的瓦里安2100气相色谱仪测定脂肪酸。结果发现,在所研究肌肉的脂质部分中,肉豆蔻酸C14的平均含量为1.25%;棕榈酸C16为29.08%;硬脂酸C18为10.21%;棕榈油酸C16:1为3.24%;油酸C18:1为50.21%;亚油酸C18:2为6.01%。
