A simple method to determine potential danger of nitrates by ascorbic acid containing in plant products is designed. The ascorbatic index (content of ascorbic acid/content of nitrates) is calculated for some products. The higher is the value of the index, the more potent is the action of the ascorbic acid and the less harmful is the effect of nitrates in the plant to human body.
设计了一种通过植物产品中含有的抗坏血酸来确定硝酸盐潜在危险性的简单方法。计算了一些产品的抗坏血酸指数(抗坏血酸含量/硝酸盐含量)。该指数的值越高,抗坏血酸的作用就越强,植物中硝酸盐对人体的危害就越小。
