Shellfish products available on the Polish market were analyzed for the content of protein, fat, carbohydrates, water, ash, energy value and vitamins B. Nutrition value of the analyzed products was determined by analytical methods applying in food chemistry. Concentrations of niacin and vitamin B6 were determined by microbiological methods. The concentration of the selected shellfish in 100 g of the analyzed products and percentage of realization on recommended level of nutritive components by analyzed products for adults were determined.
对波兰市场上的贝类产品进行了蛋白质、脂肪、碳水化合物、水分、灰分、能量值和维生素B含量的分析。所分析产品的营养价值通过食品化学中应用的分析方法来确定。烟酸和维生素B6的浓度通过微生物学方法测定。测定了100克所分析产品中所选贝类的含量以及所分析产品对成年人营养成分推荐水平的实现百分比。
