The Black Sea roach and carp-bream eggs of different degree of maturity differ from each other by the content of SH-, S--S-groups of proteins and non-protein low molecular weight thiol compounds. Definite differences were found in the optical density of soluble proteins and degree of ionization of their side groups.
不同成熟度的黑海拟鲤和欧鳊鱼卵在蛋白质的 SH-、S-S-基团以及非蛋白质低分子量硫醇化合物的含量上存在差异。在可溶性蛋白质的光密度及其侧链基团的电离程度方面也发现了明显差异。
