Abstract

Button mushrooms () were put under stimulated storage and transportation environments with different amounts of phase-change materials (PCM). Results showed that the addition of PCM effectively maintained a cooler environment and delayed a rise in temperature. And the addition of PCM, especially in a ratio 1:2 PCM:mushroom, had a significant effect on delaying the increase in cell membrane permeability, malondialdehyde and HO levels, and also delayed superoxide dismutase and catalase activity. These results suggest that PCM may be candidate in postharvest mushroom during storage and transportation.

将双孢蘑菇置于添加不同量相变材料(PCM)的模拟储存和运输环境中。结果表明,添加PCM可有效维持较凉爽的环境并延缓温度上升。并且添加PCM,尤其是按PCM与蘑菇1:2的比例添加,对延缓细胞膜通透性、丙二醛和H₂O₂水平的增加有显著效果,同时也延缓了超氧化物歧化酶和过氧化氢酶的活性。这些结果表明,PCM可能是采后蘑菇储存和运输过程中的候选材料。
