Bacterial exopolysaccharides (EPS) are essential natural biopolymers used in different areas including biomedicine, food, cosmetic, petroleum, and pharmaceuticals and also in environmental remediation. The interest in them is primarily due to their unique structure and properties such as biocompatibility, biodegradability, higher purity, hydrophilic nature, anti-inflammatory, antioxidant, anti-cancer, antibacterial, and immune-modulating and prebiotic activities. The present review summarizes the current research progress on bacterial EPSs including their properties, biological functions, and promising applications in the various fields of science, industry, medicine, and technology, as well as characteristics and the isolation sources of EPSs-producing bacterial strains. This review provides an overview of the latest advances in the study of such important industrial exopolysaccharides as xanthan, bacterial cellulose, and levan. Finally, current study limitations and future directions are discussed.
细菌胞外多糖(EPS)是重要的天然生物聚合物,应用于生物医学、食品、化妆品、石油、制药等不同领域,也用于环境修复。人们对它们感兴趣主要是因为其独特的结构和性质,如生物相容性、生物降解性、高纯度、亲水性、抗炎、抗氧化、抗癌、抗菌、免疫调节和益生元活性。本综述总结了细菌EPS的当前研究进展,包括其性质、生物学功能、在科学、工业、医学和技术等各个领域的潜在应用,以及产生EPS的细菌菌株的特征和分离来源。本综述概述了黄原胶、细菌纤维素和果聚糖等重要工业胞外多糖研究的最新进展。最后,讨论了当前研究的局限性和未来方向。
