Influences of diet on tumor growth in man have not yet been observed up to now. Therapeutic results of cancer treatment by surgery, irradiation or drugs can be improved considerably by adequate dietary regimens. Recently it has become more and more clear, that environmental factors, especially nutrition, do influence the formation of cancer. The quantities ingested of some nutrients (fat, cholesterol, fibers) seem to be important, as well as contamination of food with mycotoxins, nitrosamines, and polycyclic aromatic carbohydrates.
迄今为止，尚未观察到饮食对人类肿瘤生长的影响。通过适当的饮食方案，可显著提高手术、放疗或药物治疗癌症的效果。最近越来越清楚的是，环境因素，尤其是营养，确实会影响癌症的形成。某些营养素（脂肪、胆固醇、纤维）的摄入量似乎很重要，食物被霉菌毒素、亚硝胺和多环芳烃碳水化合物污染也很重要。
