Curcumin, demethoxy curcumin, bis demethoxy curcumin and diacetyl curcumin inhibited nitrite induced oxidation of hemoglobin in both erythrocytes and purified human hemoglobin. The activities of all the compounds except diacetyl curcumin were similar suggesting that the methoxy substituents have very little role in this biological activity. Acetylation of phenolic groups resulted in significant reduction of activity.
姜黄素、去甲氧基姜黄素、双去甲氧基姜黄素和二乙酰姜黄素均能抑制亚硝酸盐诱导的红细胞和纯化人血红蛋白中血红蛋白的氧化。除二乙酰姜黄素外,所有化合物的活性相似,这表明甲氧基取代基在这种生物活性中作用很小。酚羟基的乙酰化导致活性显著降低。
